Yummy Grilled Chicken

I love experimenting and so last night I was looking at some recipes and decided that I wanted to combine 3 into one. It turned out so good!

Grilled Chicken

2 hours before grilling put the following ingredients into the bowl.

2 big chicken breasts (skinless and boneless) cut in half
1/2 Parmesan cheese shredded
2 cups of olive oil/vinegar salad dressing (I bought the cheapest one I could find)

Mix together so chicken is well coated.

Put the remaining ingrediants over the chicken and put in fridge for 2 hours to marinate.
1/4 of chopped parsley, thyme, tarragon(Icouldnt find fresh so I used freeze dried) and oregano
1 clove chopped garlic
Seasonings of your choice. Mine: pepper and mrs. dash garlic


Grill Chicken. It goes well with my foil wrapped vegies.

Vegie wrapped in Foil

This is just a very easy, fast, and clean dish to make.

Yummy Foil Veggies

2 carrots, cut in thin slices
1 cup broccoli
2 slices of onion broken into thick pieces
1 jalapeno (use only 1/2) Sliced thinly
2 tsp olive oil
Mrs. Dash
Salt and Pepper
Fresh Oregano, Thyme, or Tarragon

You can throw in any other veggies, I have used: mushrooms (whole), zucchini, yellow squash, cauliflower, egg plant, etc.

Put all veggies in bowl, gently stir in the olive oil, put veggies on Aluminum Heavy Foil , sprinkle fresh herbs and spices over the top. Fold foil over, making sure there is a dome so that the veggies can steam, seal ends. Put on grill for 5 to 8 mins, check to see if done. Eat out of foil or put on plate. Note: the veggies will be steaming hot so be careful when opening.

Note: you can add more ingredients if making for more people.

Dad's Fabulous Baked Beans

1 large can of pork n beans
1/4 cup onion chopped
4 strips of bacon uncooked
1 cup to 1 1/2 cup of brown sugar (or more if desired to make thick)
About 1 tsp of Allspice
about 1 tsp of dry mustard
a dash of Cinnamon


Cook Bacon until done (do not cook until crisp, you want it soft cook)
add chopped onion to pain and carmelize onions. Drain fat, add pork n bean, brown suger, allspice, dry mustard and a dash of cinnamon. Cook at medium heat, stir occasionally. The beans should become pretty thick and sweet. If not thickening, add a little more brown sugar. This can be used as a great dip also.

Good Ole' Crockpot Sunday Roast with a twist!

1 envelope of dried onion soup
4 beef bouillon cubes
1 onion
1 jalapeno
1 clove of garlic
1 TBLSP of olive oil
5 potatoes chopped
5 carrots chopped
3 pound chuck roast (the best in my book)

Season roast on all sides. I love Mrs. dash, pepper, chili pepper, fresh herbs, and I insert garlic cloves into the roast itself. In separate pan heat with light olive oil. Sear roast on all sides and place in crock pot. Add beef bullion in crock pot. (this will make delicious gravy) In same pan add a little more olive oil. Roughly chop up onions, jalapeno, and garlic. Put 1 tablespoon butter into pan, add onions, jalapenos. Let saute on low until caramelized. Add garlic towards the end of carmilization. Take and put over the roast in crock pot. Sprinkle with 1/2 package of onion soup. Cook for 5 hours and add potatoes and carrots, sprinkle with the rest of the onion soup and cook for 3 hours. After done take out all veggies and roast. Pour juice into pan and add corn starch to make the best gravy ever.

Vegetarian Enchilada Casserole

1 med can of green enchilada sauce
1 small can of green chilies
1 med can of refried beans
1 small can of black beans (drained)
1 cup of sour cream
8 white corn flour taco shells
1 cup cheese of your choice (taco mixture is great)
Sliced Tomatoes
Sliced lettuce
Salsa and Jalapenos if desired.

Optional:
Add shredded chicken to the layer. Saute chicken with onions and jalepenos. spread over layer.

Put a layer of taco shells on bottom of casserole dish. Spread layer of refried beans, sprinkle black beans. Combine green enchilada sauce, chilies, and sour cream. Spread this sauce over the refried beans. Repeat with same combination as above. Top layers with taco shells, sprinkle cheese over the top and bake at 350 for 30 mins until hot. Serve with lettuce, tomatoes, salsa and roasted jalapenos. Mum...

Bacon Wrapped Corn on the Cob

Bacon (enough for one piece for each cob)
Already Shucked corn on the cob (enough for your family)
Mrs. Dash to taste
Dry onions to taste
Salt and Pepper to taste
Heavy Foil

Take the corn on the cob and season (slicing up jalepenos is a way to amp up the taste), wrap one piece of bacon around the corn (sometimes I will rub light butter on cob of corn and then add bacon and seasonings). Wrap in heavy foil. Put on grill for 5 mins on each side. (if you don't have a grill, put in oven at 350 and cook just a little longer on each side) Once the bacon is done the corn is done. This will bring an amazing taste to your corn. I will cut off the corn on my cob and cut the bacon as well and have a mix. This is not required however.

Yummy Orange Rolls

1 cube of butter (1/2 cup)
Juice of one orange
1 Cup sugar
2 cans of buttermilk biscuits

Melt butter, sugar and orange juice to a boil. Let boil for 1 minute. In a bundt pan, layer biscuits then orange mixture until you have used up the bisquits. Pour remaining liquid over bisquits (this can be done after baking if you leave a little). Cover with foil, bake at 350 degrees for 6 to 8 minutes until they are done. Uncover and bake until they are light brown. Tip over onto a plate and serve hot.
